If you are decent you don't really need extra hearts and there is also food to increase your heart count temporarily. You do however need 13 hearts later on and you get 4 just by playing through the main quest. I personally found the game a lot more enjoyable with 3 circles of stamina.

I also did a double-stamina-wheel buff and a max-hearts buff. The reward for completing the trials makes it worth it. The double-powered master sword lasts a lot longer than the standard-issue one and does a ton of damage.
